Finally a break after a l-o-n-g stretch of work that even spanned last weekend. Catching up on lounging around the house with coffee and the new crop of food magazines. A busy few weeks behind me, and another few to go before August vacation, but there’s a lot to look forward to, too.

What I’m reading: The Alchemist by Paulo Coelho
I thought about pulling quotes that resonated with me to list here, but I ultimately feel the book is somewhat like a horoscope: it’s enjoyable because people will find different quotes, phrases, or stories resonate based on where they are in life, and different aspects will jump out if you pick up the book again a bit later.
What I’m cooking (in case you’re in need of inspiration for your week’s meals):
Monday: Pasta with goat cheese and bell pepper sauce
Tuesday: Leftovers
Wednesday: Pan-seared salmon with mashed potatoes and roasted broccoli
Thursday: Red bell pepper-sauced chicken with black beans
Friday: Pork chops with sugar snap pea vegetable mix
Saturday: Steak tips with cauliflower-bell pepper vegetable stir fry
