Here’s what I’m eating and reading this week:
This book took a little bit of time for me to really get into it, maybe 100 pages in to the 250-page story, I started to like it more. But at the same time, the first 100 pages weren’t boring or dragging; an easy, enjoyable read, but I wasn’t invested. It’s a nice book to wrap up the summer, but it isn’t intellectually stimulating. I’m looking forward to books with more heft in the coming months.
What I’m eating this week (in case you need a little meal-planning inspiration):
Sunday: Chicken salad sandwiches, outdoor grilling
Monday (Happy Labor Day!): Thai leftovers and freshly baked oatmeal cookies
Tuesday: Pan-seared salmon with arugula, corn, and tomato late-summer salad (sooo good, but a bit labor intensive)
Wednesday: Simple beef curry served over brown rice (made this and realized there are no vegetables in here, so I’d definitely recommend throwing in some chopped bell peppers at a minimum)
Thursday: Curry leftovers
