Sunday Morning Coffee: August 2, 2020

It’s been a busy week, and yet we’ve barely left home and have been hunkering down during what have been some of the hottest days in Boston’s summer thus far. When we got a bit of a break in the heat, I took advantage of the cooler morning temps to make focaccia dough. Every August it seems I’m tempted by a bunch of tomato recipes that call for long hours of roasting or simmering or other steps that are absurdly hot for mid-summer.

I resist as much as possible, but we did have a roasted tomato soup this week. There’s also a recipe for tomato cobbler I have my eye on. I hope I’m not speaking too soon, but it looks like the garden tomatoes we’re growing might be one of the few veggies we’re able to harvest before the squirrels and bunnies get to them.

Sunday: Grilled chicken, cous cous, and tomato salad
Monday: Leftovers
Tuesday: Roasted tomato & pepper soup (from Cool Beans), onion focaccia (from Vegetarian Silver Spoon)
Wednesday: Leftovers
Thursday: Fusilli w/beans, tomato, and corn (again, from Cool Beans)
Friday: Pizza night
Saturday: Late lunch with my sisters (La Voile) and a smaller dinner nosh on leftovers
