Sunday Morning Coffee: October 4, 2020

It’s the first weekend in October, and it’s been a full week. Fall always feels like a wonderful time for a fresh start. I’ve always been a fan of the back-to-school feeling, which I’m doing again this year (though remotely, and with kids underfoot at home this time). The bigger change for this space this fall is the refresh I’ve worked on for this site! Ta da!

What I’ve Been Reading Recently:

The news has been coming at us fast and relentlessly, but there’s a lot that happened that shouldn’t get lost in the deluge of what comes after it (remember the debates, the tax returns…).

I remember really hitting a wall with this blog a few years ago (especially around the 2015 Paris terrorist attacks) where it felt so incongruous to try to post about weekly readings or upcoming meal ideas when such jarring and tragic events were happening. I’m trying to capture some of what I’m reading (and find helpful or well-written) about this below.

Made these cherry sweet rolls at Charlotte’s request.

Seems like lots of folks are feeling it’s the right week to make chili: turkey chili (NY Times), pumpkin chili (America’s Test Kitchen paywall), or my vegetarian sweet potato chili

What I’ve Been Cooking This Week:

Sunday: Breakfast for dinner: waffles & sausages, fruit

Monday: Quesadillas (beef, pinto bean, and bell pepper filling) with avocado and cabbage slaw

(Tip: I bought 1 pound of ground beef and used 1/3 for the quesadillas and 2/3 for the macaroni bake.) 

Tuesday: Beef & macaroni bake, roasted broccoli

Wednesday: Vinegar chicken with crushed olives (NY Times), baguette, and roasted carrots

Thursday: Leftovers

Friday: Leftovers again

Saturday: Grilled bratwurst (maybe our last of the season)

Coming up this week:

  • Chili almost certainly, which I love to pair with cornbread
  • Sweet & sour chicken
  • Some kind of pasta, perhaps carbonara
  • An interesting sweet potato quiche recipe I’m curious about
